That's no bread basket: At many Latin American establishments, yuca frita — that is, fried cassava — resembles potato wedges or steak fries. At this Dominican restaurant, by contrast, the cassava tubers were grated and formed into patties, much like Jamaican bammy, and then gently fried. The finished product consisted almost entirely of tantalizing crisp surface.
