For the mixed shuco, a three-meat Guatemalan sandwich, the bun is flattened, toasted, and overloaded with steak, sausage, and chorizo, plus avocado and cabbage, then striped every which way with ketchup, mayo, and mustard. Good luck clamping it tight! Also shown: the national flag, which hangs from the large blue umbrella, and surviving signage from the cart's original owner. Some of the original over-rice menu items have been held over as well.
