These tacos al vapor de maciza, steamed tacos with lean meat, were filled with beef. (Maciza can also indicate pork, goat, lamb, or chicken; the term refers to the leanness of the cut, not to the animal it's cut from.) This was simply a refueling stop, on a weekend afternoon when the restaurant was particularly quiet; a busy weekend morning would be a better time to test the taquero's hand with tacos al vapor de lengua or de ojo.
