For a loose-meat sandwich, it's well-composed: The sloppy kielbasy, uncured sausage from the old country sauteed in seasonings from the new, then braced by a gently toasted bun. Also shown: brynzdové pirohy, filled with brynzda (a Slovak sheep's milk cheese) and potato, boiled in brown butter, and accompanied by sour cream and bacon.
