Masato is a lightly fermented Latin American beverage that can be prepared from grains, roots, or fruits. As in the Andean region of Colombia, this rendition is made with rice. It's just barely thick enough (and perhaps it had settled a bit, too) that the vendor limbered up his container with a few twirls of the wrist before pouring out my serving, then shaking on some cinnamon.
