(This venue is closed.) "Young chicken eggs" — unlaid, all yolk — distinguish this rendition of the Vietnamese chicken noodle soup. Even more noteworthy, although scarcely evident in my photos, is the depth of character conveyed by what I'll call "old rooster broth." Some tough birds still have plenty to offer.
