The porterhouse is served with a pair of spoons, wielded by the waiter as makeshift tongs. A small overturned plate tips the platter slightly toward one end, creating a pool of jus that he will eventually spoon over each serving. At the table, use of sharp utensils is strictly the province of the diners.
More recently (and shown below): creamed spinach, with a burger and fries on the side. For dessert (split with a dining buddy, who had a burger of his own): pecan pie and an immense bowl of shlag (we could've parked that whole slice inside it); the "Holy Cow" ice cream sundae.
